Notes about the 7 Bridges Red Ale I’m finishing up:
7/7/7:
Followed instructions exactly. Wort chilling took 1 hour.
Pitched yeast at 1am 7/8/7
OG (adjusted) 1.045, 75F
7/9/7 at 9am:
Prefermentation (patches of yeast on the surface, stationary bubbles around edge)
7/9/7 5:30pm:
fermentation has started.
7/10/7:
fermentation going strong, churning, etc
7/14/7:
Fermentation slowed down.
Light bubbles at edges.
Huge swath of yeast at the bottom of the fermenter
7/17/7 1:00 pm
Very little fermentation. Tiny bubbles randomly. 1.006, ~75F
Smells like beer!
First taste!
Very yeasty. A bit hoppy. Flavor (aside from yeast) and aroma is very light. Tastes better than Natty Ice, but feels as light.
7/18/7:
No discernable bubbles.
Gravity still at 1.006
Still smells and tastes like beer!
7/19/7 10 PM:
Gravity still at 1.006.
Began bottling.
Got 60 bottles from Constant Spring (local bar). Washing and sanitizing bottles would be so much nicer with a bottle washer.
I really like Negro Modelo bottles, but they may not be sealing properly. We’ll see.
Pretty excited, with the unreacted DME added, it tastes awesome!
