Enough people liked this that I thought I’d post the recipe. It’s a raspberry cake thing I made and brought in to work, this week.
Note that you should double this — it’s super hard to mix when you’re just making for one loaf.
Preheat oven to 350F
Grease baking pan
1 1/3 cup flour
3/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
Whisk til thoroughly mixed
5 1/3 T unsalted butter (I’ve gotten away with salted, but ymmv) 2/3 cup sugar
Separately, beat until lightened in color and texture
Add to flour and mix well
2 L. eggs, slightly beaten (just so they’re whimpering, not running to the cops)
Add to flour mixture and mix well
1 cup fresh raspberries, chopped
Fold in if you want more solid pieces, mix if you want more saturation (my preference)
Spoon/pour into baking pan. Should be half-full.
Bake for 50-60 (closer to 50) until toothpick inserted near center comes out clean. Let cool in pan on rack for 5 minutes, then remove from pan and cool on rack.
Notes:
- I think the powder/soda may need to be adjusted a little, but the above is the recipe that I know works
- Use an electric mixer. Mixing by hand is asking for hurt cause it’s so thick
- You may consider adding a T of vanilla, for flavor and extra liquid
- Would work well as a muffin
- Would also work well with white frosting on it
